Additional Idea to Add: For users that use USPS via EasyPost, maybe a intune schedule a pickup screen could be helpful.
USPS already offers free pickups, it would be greatly beneficial to add a feature where the customer could schedule a pickup via a calendar like flow where they could select their preferred pickup date. (Of course this should be an optional step once the customer lands on the confirmation screen).

Side Question, Has anyone experimented with using outside 3rd parties such as Uber or DoorDash to facilitate device collections? If so, what works better, and how is it streamlined?

I completely agree with this.
One thing that would be nice to add is it would have the ability for a customer to choose their collection date too.
We use a collection service with DPD, where the courier collects the package directly from the customer's address rather than requiring them to print a label and take it to a drop-off point.
It would be great if the customer could choose their preferred collection date when accepting a quote — it would save us from having to email them and would remove another potential barrier to completing the transaction.
